Customer Review: Great for first time ravioli makers!

I decided to make my first batch of ravioli after work, on a weeknight. I had no idea what I was getting myself into. I read the directions for the press, whipped up a batch of filling (ground chicken, peppers, and mozzarella cheese) and started rolling out the dough. I used my Imperia 150 pasta machine, rolled the dough down to the second to last setting, and laid half a sheet over the metal part of the press. Then I inserted the plastic thing to make the indentations for the filling, filled the holes, and covered the metal thing again with the other half of the pasta sheet. I made one pound of pasta dough, and with that one pound I was able to make 48 ravioli. From start to finish (with pre-made sauce) it took about an hour and a half.

Let me tell you, it makes a HUGE difference if you spray the metal tray with nonstick cooking spray before you put the first sheet of dough on it. I forgot this little tip and my first batch of 12 was very hard to get out. After that, I remembered what the reviews recommended and sprayed it with Pam. The remaining three batches just popped right out. Every single ravioli sealed perfectly and not a single one popped open in the cooking pot. I cooked them 12 at a time for about 14 minutes and they were perfect.

This thing is amazing. It's simple enough to get perfect results the first time you use it, and easy enough to make fresh ravioli on a weeknight. Don't waste your money on the attachments for the pasta machines, this thing is so easy a kid could do it!

Customer Review: Excellent Tool for Making Easy Ravioli

I used to make ravioli by hand (ie. drop filling right on a sheet of pasta w/ another sheet on top, press down sides by hand, squeeze out air, cut w/ knife, etc.) and this weekend we finally pulled this gadget out of the back of our pantry to give it a try. I was truly amazed by how WONDERFUL they turned out. They were gorgeous and the process could not be any easier. A few tips:

- You may need to press the pasta sheet down while filling since the stretched pasta seems to form back
- Rolling right across does not do it. Try all directions and only one side of the roller (ie left or right side)
- Make sure you have plenty of flour on a tray before you pop the ravioli on it because they will stick.
- Don't pile rows of ravioli on top of each other. They will stick
- Don't make too thin as they might tear when you press down on them

Great tool and nowhere near the mess we usually make when laying huge pasta sheet on the table, etc. I'd pay 50 dollars for this thing now that I know how good it is. Very little air trapped in the ravioli. They look very professional.

Or is it raviola? Or maybe singular is raviolum. Beats me.

However, this is a great tool for a great price. I owned a smaller version of this for years, but quit using it because it took so much more time to make and fill little ones in quantities to feed a family. However, this Norpro ravioli maker got me to a big batch of them in minutes. I'm quite happy.

They provide a starting recipe for you, but if you're like me, you grab what sausage, spices and cheese you have handy and make a mixture to put in them. The plastic tray supplied will make the basic indentation. I used my pasta maker to roll the sheets to about the #3 notch. When inserting the mold onto the dough, the let the dough rest a couple minutes before filling so the hollows don't level out too quickly. Moisten the dough where the overlapping sheets will touch. Use a rolling pin to seal and cut. I found I got better results if I took each piece between my palms and press to "burp" any trapped air.

You know, I am ashamed to admit it, but I actually snickered when I first saw this product. What a silly, silly girl I am. I have one now and it is an absolute delight to work with and makes perfect ravioli. Is quick, easy to clean and works oh so much better than the expensive machine I have.

I was so grateful for the other reviewers here who recommended a quick spray of PAM or liberal flowering to prevent sticking. I followed their advice and had no problems what so ever.

The size of the ravioli is perfect and you get nice uniform pieces which certainly help in the cooking process.

It is amazing that something so simple can work so well and bring so much joy to the kitchen. It must be noted that this is so simple to use that you can turn out quite a number of these tasty morsels in a flash once you get set up.

I will no longer snicker at new kitchen products...I promise.

I am very pleased with the Norpro Ravioli Maker and Press that I recently purchased. It makes making ravioli so much easier. I use flour on the maker and press to keep the ravioli dough from sticking. I also found that the back of a spoon (coated in flour) works well to ensure each seam stay together after using my rolling pin. This also helps each ravioli to release individually from the press. I purchased two ravioli makers and gave one to my son who also finds it much easier to make ravioli than making them free hand. I highly recommend this product-- the only problem is that the ravioli look like you purchased them!! Is this really a problem?
